Cucumber-Mint Raita | fresh and creamy

Cucumber-mint raita is one of those simple accompaniments that can completely change a spiced dish.

Its role is to refresh, balance, and soften. The yogurt adds creaminess, the cucumber freshness, the mint a clean aroma, and the cumin a very subtle spiced background.

In our menu, we served it alongside mild tandoori-style spiced chicken, cardamom basmati rice, and homemade mango chutney.

Cucumber-mint raita

Serves: 2
Difficulty: very easy
Preparation: 10 minutes
Chilling time: 15–30 minutes recommended
Total time: about 25–40 minutes

Ingredients

  • 150 g plain Greek yogurt
  • 100 g cucumber
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp fresh cilantro, optional
  • 1/2 tsp lemon juice
  • 1/4 tsp ground cumin
  • Salt to taste
  • Black pepper to taste

Step-by-step preparation

1. Prepare the cucumber

Grate the cucumber coarsely or chop it very finely, depending on the texture you prefer.

Then squeeze it lightly with your hands or with kitchen paper to remove some excess moisture.

It does not need to be completely dry; the goal is simply to keep the raita from becoming too watery.

2. Prepare the yogurt base

Place the Greek yogurt in a bowl.

Add the cucumber, mint, optional cilantro, lemon juice, cumin, salt, and pepper.

Mix gently until everything is evenly combined.

3. Adjust the flavor

Taste the raita.

For more freshness, add a little more mint.

For more acidity, add a few more drops of lemon juice.

The cumin should remain subtle.

4. Chill

Cover the bowl and refrigerate the raita for at least 15–30 minutes.

This gives the flavors time to come together.

5. Serve

Just before serving, stir gently, check the seasoning, and garnish with fresh mint or cilantro if you like.

Why squeeze some of the water from the cucumber?

Cucumber contains a lot of water.

If you mix it straight into the yogurt, the raita can become too thin after a short time.

The goal is not to dry the cucumber completely, but simply to control the moisture.

Greek yogurt or regular yogurt?

Greek yogurt works especially well because it is thicker and creamier.

Regular plain yogurt can also be used, but if it is very thin, it is best to drain it briefly first.

Mint and cilantro

Mint is one of the main flavors in this recipe and gives the raita its characteristic freshness.

Cilantro is optional.

If you like it, add a small amount for a more herbal profile. If not, the raita works perfectly with mint alone.

How I served it

For this menu, I preferred to serve the raita in a separate bowl rather than spooning it directly over the chicken or rice.

That way, everyone can add as much as they like, and the contrast between the cold raita and the warm parts of the meal stays intact.

Tips from my kitchen

  • Use the yogurt well chilled.
  • Squeeze the cucumber lightly so the raita does not become watery.
  • Use cumin sparingly.
  • Let it rest in the refrigerator before serving.
  • Stir again just before bringing it to the table.
  • Add fresh mint at the end to preserve its aroma.

A sauce for balance

In a spiced dish, raita is not there to compete.

Its role is exactly the opposite: it brings freshness, creaminess, and balance.

Mi cocina entre mundos

This raita completes the menu we have been building very well.

The chicken brings warmth and spice, the basmati rice acts as an aromatic base, the mango chutney adds sweetness and acidity, and the raita provides the cool, creamy contrast.
