Mild Tandoori-Style Spiced Chicken with Mango Chutney

Some dishes seem more elaborate than they really are simply because they are packed with aroma. This mild tandoori-style spiced chicken is one of them: the key is a good marinade rather than a complicated technique.

The marinade combines yogurt, ginger, lemon, and spices, helping the chicken stay juicy while developing a golden, aromatic surface. At home we served it with cardamom basmati rice, cucumber-mint raita, and our homemade mango chutney.

This is not intended to reproduce a strictly traditional tandoori dish. It is a mild, home-friendly interpretation made with accessible ingredients and a moderate level of heat.

Mild tandoori-style spiced chicken

Serves: 2
Difficulty: easy
Active preparation: about 15 minutes
Marinating: at least 45 minutes, ideally 2–3 hours
Cooking: about 10 minutes

Ingredients

  • 350–400 g skinless chicken breast or boneless chicken thighs, with or without skin
  • 100 g plain Greek yogurt
  • 10 g fresh ginger, finely grated
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • 1 tsp sweet paprika
  • ½ tsp Garam Masala
  • ½ tsp ground cumin
  • ¼ tsp turmeric
  • ¼ tsp ground coriander
  • ¼ tsp salt
  • Black pepper to taste
  • 1 pinch chili or cayenne, optional
  • Fresh cilantro, to finish
  • Lime or lemon, to serve
  • Optional: 1 small garlic clove, finely grated

I made mine without garlic. If you enjoy garlic, feel free to add one small clove.

Chicken breast or chicken thighs?

You can make this recipe with either skinless chicken breast or boneless chicken thighs.

If you want a leaner preparation, skinless chicken breast is the best choice. It contains less fat and still works very well with the yogurt-and-spice marinade.

If you prefer boneless thighs, you can remove the skin to reduce the fat, or leave it on for a juicier, more deeply browned and more flavorful result.

Personally, I prefer thighs with the skin on for this dish because they have more flavor and cook beautifully in a pan. They do add more fat, though, so it depends on your preference.

The marinade

The yogurt helps keep the chicken juicy and gives the spices something to cling to.

Mix the yogurt, ginger, lemon juice, oil, paprika, Garam Masala, cumin, turmeric, ground coriander, salt, pepper, optional chili, and optional garlic in a bowl until smooth.

Step-by-step preparation

1. Prepare the chicken

If using chicken breast, leave it whole if it is not too thick or cut it into large pieces. If using boneless thighs, trim excess fat if desired. Pat the chicken lightly dry.

2. Marinate

Coat the chicken thoroughly in the marinade, cover, and refrigerate.

Marinate for at least 45 minutes, ideally 2–3 hours.

Pan-cooking method

3. Before cooking

Take the chicken out of the refrigerator about 15–20 minutes before cooking. Remove only the thick excess marinade, leaving a thin coating on the surface.

4. Heat the pan

Heat a large frying pan over medium-high heat for about 2–3 minutes, then add a thin layer of oil.

5. Cook the chicken

Place the chicken in the hot pan and do not move it straight away.

Cook for about 4–5 minutes on the first side. Once well browned and easy to release, turn it over and cook for another 4–5 minutes.

If the marinade starts to darken too quickly, reduce the heat slightly.

The chicken should reach about 74°C / 165°F in the center.

6. Rest

Remove from the pan and let the chicken rest for 3–5 minutes before serving.

Grill option

You can also cook the chicken on an electric grill. Preheat it well and grill the chicken for roughly 4–5 minutes per side, depending on thickness.

How I served it

At home I served it with cardamom basmati rice, cucumber-mint raita, fresh cilantro, and homemade mango chutney.

The chutney works particularly well because its fruity sweetness, acidity, and spice contrast beautifully with the warm spices in the chicken.

Tips from my kitchen

  • Do not cook the chicken straight from the refrigerator.
  • Remove only the thick excess marinade before cooking.
  • If using stainless steel, let the pan heat properly first.
  • Do not move the chicken too early; once browned, it will release more easily.
  • For deeper flavor, marinate for 2–3 hours.
  • Garlic is completely optional.
  • For more heat, increase the cayenne or chili slightly.

Is this really tandoori?

The word “tandoori” traditionally refers to food cooked in a tandoor, a clay oven used across South Asia.

This recipe is not cooked in a tandoor, which is why I prefer to call it “tandoori-style”. The combination of yogurt, ginger, and spices is inspired by that flavor profile, while the cooking method is adapted to a home kitchen using a pan or grill.

Mi cocina entre mundos

This dish fits the idea behind Mi cocina entre mundos very well: taking recognizable flavors, adapting them to the ingredients and equipment we have at home, and turning them into something practical for an everyday dinner.

In our menu, this chicken was the main course after the mini vegetable samosas and before a fresh yogurt-and-mango dessert.
