Homemade Rice Milk

Making this rice drink immediately reminded me of Guatemala and of horchata de arroz.

They are not exactly the same drink. Guatemalan horchata has its own preparation and may include additional ingredients and flavours. Still, there is something instantly familiar about turning rice and water into a smooth, lightly sweet drink, particularly when served cold.

That is why I do not think of this recipe simply as a milk substitute. It can be enjoyed for what it is: a refreshing homemade rice drink.

Ingredients — approximately 1 litre

  • 1,000 g water
  • 30 g short-grain or round white rice
  • 25 g sugar
  • 3 g mild sesame oil
  • Vanilla, to taste
  • 1 pinch salt

Which rice should I use?

Germany: Rundkornreis or Milchreis. Spain: arroz redondo; Bomba rice can also be used. UK: short-grain rice or pudding rice. US: short-grain white rice; medium-grain Calrose also works. Guatemala and Latin America: white short-, medium- or round-grain rice. Arborio can also be used.

Basmati and jasmine would not be my first choices for this drink.

Thermomix method

Place all the ingredients in the mixing bowl and cook 10 min / 90°C / speed 6. Leave to rest for 5 minutes, then blend 1 min / speed 10. For an even finer consistency, blend another 30 sec / speed 10.

Without a Thermomix

Place all the ingredients in a saucepan, bring gently to the boil and cook over low heat for approximately 20–25 minutes, until the rice is completely tender. Remove from the heat and rest for 5 minutes.

Blend thoroughly in a heat-safe blender until very smooth. If your blender is not suitable for hot liquids, allow the mixture to cool first. An immersion blender can also be used.

Does it need to be strained?

Not necessarily. For an exceptionally smooth texture, pass it through a fine sieve.

Adjusting the consistency

The drink will thicken slightly as it cools. If necessary, gradually blend in 50–100 ml water.

Enjoy it cold

Perhaps because it reminds me of Guatemalan horchata, I particularly enjoy it well chilled as a refreshing drink. It does not have to be used as a milk substitute; it can simply be enjoyed as a homemade drink in its own right.

Storage

Keep in a clean bottle or glass jug in the refrigerator and preferably use within 3–4 days. Some separation is completely normal. Shake well before serving.
